• uses only cool methods of grinding an edge.
  Quality knives are heat treated to provide just the right amount of hardness and stress resistance.  Overheating a blade when grinding will weaken or destroy a good knife or tool.
        
• removes as little metal as possible when sharpening. 
  A good knife or tool can last a lifetime when cared for and sharpened properly.  Excessive stock removal reduces the lifespan of the blade and can drastically change it's shape and performance. 
    
• provides a clean, even edge from heel to point.
  The edge should look straight and professional.  There should be no hollow areas on the blade edge that does not touch the cutting board. Occasionally an even edge may not look even to the eye if the construction of the blade itself was improperly ground at the factory.
